Coming back to his home in South Tyrol, he started to look differently at the way he and his entire profession were doing things. Cook the Mountain was born from his desire to move away from globalized ingredients and instead use what the beautiful nature around him had in stock. In his restaurants he and his team which he calls family showcase the beauty of Alpine products such as native vegetables, herbs, and meat, all sustainably sourced from local producers.
