    Gareth is one of the UK's most respected and best-known TV Producers and Media Coaches. He's produced shows for all the major channels - BBC, ITV, Channel 4, SKY, Channel 5, BBC News, worked with TV's biggest presenters, and coached a long list of corporate companies like ASOS, NIKE, Prudential, Porsche, Amazon, Conde Nast...

    Gareth has worked in television and the media for over 20 years. He has produced countless hit shows and endless award-winning series across all genres from Entertainment, to Features, to News - Strictly Come Dancing, So You Think You Can Dance, The Hit List, TOTP, Later with Jools, Royal Variety, Eurovision Song Contest, Pitch Battle, The Weakest Link, Blue Peter, Watchdog, National Lottery, The Hit List. Gareth has also Produced Channel 4 documentaries - all his own ideas, and was based out in LA for BBC News working as a Broadcast Journalist.

    Gareth has a great track record breaking new presenting talent on TV and has worked as a Talent Exec for the BBC. He was responsible for finding, casting and producing the 4 judges on Strictly Come Dancing – Arlene Phillips, Craig Revel Horwood, Bruno Tonioli and Len Goodman – all now big BBC faces and internationally known presenters. And has put brand new faces on shows for the BBC, ITV, Channel 4, E4, Channel 5, ABC America... Gareth has done lots of work in Development (coming up with and pitching programme ideas with presenters attached) - heading up teams for the BBC, and other independent Production companies.

    Food

    When a guest says 'Wow - anything!' in response to what they'd like to eat, it's both exhilarating and slightly nerve-wracking. On one hand, I have complete creative freedom to craft something truly special. On the other, the responsibility rests entirely on my shoulders to ensure they enjoy a genuinely delicious meal. I do not create my own recipes, I usually use what's out there and sometimes add a touch of my ingredients if I feel the dish needs it.

    I decided to make two dishes from Ottolenghi: Butter beans with roasted cherry tomatoes & Chicken Shawarma sandwiches. Gareth loved both of my dishes, especially the starter! The effort and researching for the perfect dish has truly paid off :)

    I have never cooked Lithuanian "Saltibarciai" (Cold beetroot soup with kefir) on my show yet, but I always wanted to. Albeit I know it's not for everyone. I decided to take a risk and make it for Nilesh. :) I served it with crispy potatoes on a side. It is very healthy soup, and I truly hope Nilesh has enjoyed it. :)

    Of course I am going to make exactly what my guest wants! I cooked the dish a few days before to test it with my family, and after I received everyones approval, I was delighted to cook it for Rob. He loved it! :)

    Anna is quite easy when it comes to food, and is happy for me to choose whatever, however she wrote that she LOVES scallops and so it was an easy decision to make. I love scallops too, so practising this dish was a true joy for me and my family! As always, I find recipes on the internet, and sometimes merge two different ones. That's what I've done here, and it turned out amazing! Anna loved this dish and that's a win for me!

    Steve Lindsey is a charity trustee for Alopecia UK. From a young age he unknowingly reframed his visible difference and now shares his experiences to help others with Alopecia live with confidence. Notably, children and young adults who are at a stage in their lives where resilience and the right mindset is critical to their future happiness and success.

    He is also the Challenge Ambassador for his local Hospice in the Weald, who provide care & support to those with a terminal or life limiting illness. He fundraises through endurance events on foot, bike, Ironman and also completed the 255 World's Longest Single Day Triathlon.

    His day job is with Lincoln West, an event geek and organiser of the National Sales Conference & Awards, widely recognised as Europe's most celebrated personal & professional development experience for Revenue Leaders & Sales Teams.

    Food

    Steve enjoys all food, so he was very happy to go with my recommendation. However, he gave me some ideas: fish, lamb, vegetarian dishes & tapas. Something light & healthy.

    I was watching Masterchef Professionals one day, when they made tartare beurre blanc sauce, and straight away I thought I want to make this sauce for Steve to go alongside nice Cornish sole with potatoes.

    Not all the dishes require practise, but the sauce kept me practising twice before filming. I wanted to make sure I get the right flavour.

    The sauce is so delicious, that I added it to my repertoire of sauces to be made to my friends when they come over for dinner. Steve truly enjoyed his dish and I made sure there is plenty of it! ;-)

    When Simon asked for "anything light and delicious," he didn't give away much. But after getting to know him, I found out he really loves food with plenty of flavor. I'm glad my dish hit the mark for him.

    I always trust my gut feeling when choosing what to cook for guests. Once Simon mentioned wanting something light, fish seemed like the perfect choice. I thought Asian flavors would work well, and I wanted it to look good too. From his social media, I could tell Simon really appreciates good food.

    I made crispy skin stone bass on a bed of light, flavorful curry, with crispy shallots and rice on the side. I made my own curry paste because the ones from shops just don't have enough flavour kick.

    I also made beetroot cured salmon with apple and cucumber salad, and he loved every bite of it!

    Cara suggested to have ingredients of chicken, cheese, tomatoes, root veg. She loves Mediterranean and Ottolenghi and in general she just loves food!

    After reading this, my mind straight away raced to form this picture of a perfect meal for Cara, full of flavour, hearty and delicious.

    It would be all in one pan dish, and I found just the perfect recipe for that. As you know, I do not create my own recipes, but I often add my own touches if I feel like it needs something different or additional. I cooked Chicken breasts with mozzarella and tomatoes, served alongside crispy bread, pasta and refershing salad with balsamic vinegar pearls.

  • Episode 31 - Alex Staniforth: Record-breaking Adventurer

    Alex Staniforth is a record-breaking adventurer, ultra-endurance athlete, international keynote speaker, author and charity founder from Chester, who is no stranger to overcoming challenges.

    By the age of 19 he had already survived the two most significant disasters in Mount Everest history, in two consecutive years. However, his biggest mountains have been within: overcoming epilepsy, bullying, mental ill health and a stammer since childhood.

    Alex has never allowed adversity to become his identity – only an opportunity to discover his potential and inspire others.

    He is the fastest person to climb all 100 UK county tops - covering 5,000 miles by human power in 72 days. He has raised over £100,000 for charity, winning the Pride of Britain Granada Reports Fundraiser of the Year 2017 and a Points of Light award from the Prime Minister in 2023.

    Alex shared with me that he loves seafood and Thai cuisine. After careful consideration and research, I decided to prepare a light yet incredibly flavourful fish dish.

    I discovered a wonderful recipe for steamed sizzling fish that I felt compelled to test beforehand. When I served it to my family, they were amazed by how much flavour this seemingly simple dish delivered and immediately requested it become part of our regular weekly menu. I complemented the fish with fragrant rice and a refreshing Asian spinach salad.

    After tasting it, Alex remarked that he had never experienced cod prepared so deliciously and thoroughly enjoyed every bite. Seeing his genuine appreciation made the effort truly worthwhile! :
