Fett ist Richtig Fett

Tierische Fette: Ungesund für Herz und Blutgefäße wird uns auch seit Jahrzehnten gesagt, aber in Frankreich, wo viel Käse, Sahne, Butter, Gänseleber und fettes Fleisch gegessen wird, die geringste Zahl von Herz-Kreislauf-Erkrankungen in der westlichen Welt. Dies ist bekannt als der Französische Paradox Es gibt wenig wirkliche Klarheit, die Angelegenheit ist äußerst komplex. Du kannst Menschen nicht in einen Käfig sperren und ihre Ernährung genau überprüfen. Die Menschen in Untersuchgruppen lügen und sagen dir, was du hören willst. In dieses Buch geht es um Fett, und es wird vor allem klar das es nicht klar ist. Es gibt eine Reihe von Dingen, die wirklich ungesund sind, Rauchen, übermäßiger Alkoholkonsum und künstlich gehärtete Fette. Im Übrigen ist das leider nicht ganz so klar. Ein sehr lesenswertes Buch. Der Leser wird (hoffentlich) klar das die Ernährungswissenschaft sehr komplex ist, und das einfache Schlussfolgerungen nicht gültig sind. Tierisches Fett ist nicht ungesund, wir brauche Fette. Tierische Fette haben ein schlechten Ruf aber das ist nicht gerechtfertigt.
